Apple and cinnamon mini pancakes

Who says cooking a different kind of breakfast has to be complicated? Here's a recipe with just 4 ingredients that you can eat on weekends or on less busy weekday mornings!

Ingredients

  • 60 ml (¼ cup) unbleached all-purpose flour
  • 5 ml (1 teaspoon) cinnamon 
  • 125 ml (½ cup) applesauce 
  • 1 egg
  • Oil or butter, for cooking
  • Anything you like to eat with pancakes : maple syrup, fruit, nuts, Greek yogurt, peanut butter or nut butter, jam, etc.

Preparation 

  1. In a medium-sized bowl, mix the flour and cinnamon using a fork.
  2. Add the applesauce and egg and mix until smooth. 
  3. In a non-stick skillet, heat a bit of oil or butter over medium heat.
  4. Using a ladle, pour small rounds of the mixture into the skillet. Be careful to leave space between them to prevent from sticking together.
  5. Cook for 2 to 3 minutes on each side.
  6. Place the pancakes on a plate and serve with whatever you like!
  7. Enjoy your breakfast!
