FESTIVE LEMONADE
For the holidays or any other special occasion, here is a sparkling recipe that will make you happy! Cheers!
Ingredients:
- 250 mL (1 cup) water
- 125 mL (½ cup) sugar
- zest of one clementine
- 8 clementines
- Ice cubes
- Sparkling water
- Pomegranate seeds (optional)
- Rosemary sprigs (optional)
Preparation:
- Wash your clementines well. Use a zester or grater to peel a clementine. Grate only the orange layer of the peel. Keep the peel.
- Cut the clementines in half and squeeze them. Keep the juice.
- Place the water and sugar in a small saucepan. Bring to a boil and let it boil for 5 minutes. Turn off the heat and let it cool. What you get at this step is called a simple syrup.
- Pour the juice and zest of the clementines into the simple syrup. This mixture becomes your base concentrate. Keep this concentrate in the refrigerator.
- When you are ready to serve, fill a tall glass with ice cubes. Fill the glass to ⅓ full with the concentrate and then add sparkling water until the glass is full.
- Stir and garnish your glass with a rosemary sprig and pomegranate seeds.
Variations:
- You can substitute any other citrus fruit for the clementines if you prefer!
- If you want to serve more than one person at a time, you can make a pitcher of lemonade with the same proportions (lots of ice, ⅓ of concentrate and fill with sparkling water).
