PUMPKIN PATTIES

Who's a fan of molasses patties? We are, and we decided to make a fall pumpkin spice version!

Ingredients

  • 500 mL (2 cups) unbleached all-purpose flour
  • 5 mL (1 tsp.) baking soda
  • 2.5 mL (1/2 tsp.) ground cinnamon
  • 2.5 mL (1/2 tsp.) ground ginger
  • Pinch of cloves
  • 75 mL (1/3 cup) melted butter
  • 250 mL (1 cup) brown sugar
  • 250 mL (1 cup) pumpkin puree*
     

Preparation 

  1. Place the rack in the middle of the oven and preheat it to 180°C (350°F).
  2. Line two baking sheets with parchment paper or silicone mats.
  3. In a bowl, mix the flour, baking soda and spices.
  4. In another bowl, mix melted butter, brown sugar and pumpkin puree.
  5. Add the dry ingredients to the pumpkin mixture and mix until the dough is smooth.
  6. Using a tablespoon, shape dough into balls and place on baking sheet.
  7. Lightly crush the dough balls with your hands.
  8. Bake the cookies, one sheet at a time, for 15 minutes or until the cookies are cooked but still soft.
  9. Let cool before serving.

* You can use the flesh of your Halloween pumpkin and bake it in the oven for about an hour (the length of time will depend on the size of the pumpkin). You can also buy canned pumpkin puree at the grocery store. You'll find it in the baking section next to the canned cherries.
