Banana coconut energy bites

Ingredients
- 375 mL (1½ cups) quick-cooking rolled oats
- 1 ripe banana
- 60 mL (¼ cup) powdered milk (optional)
- 60 mL (¼ cup) honey
- 150 mL (⅔ cup) unsweetened shredded coconut (reserve half this amount in a small bowl for last)
- 5 mL (1 teaspoon) vanilla
Preparation
- In a large bowl, mashed potato the banana with a fork until it is pureed.
- Add and mix all ingredients, except for the coconut reserved for last.
- Shape the energy bites with your hands by squeezing the mixture and rolling it between your palms.
- Then roll the balls in the reserved coconut to coat them well.
Place the energy bites in an airtight container in the refrigerator for 4 hours or overnight.
