Banana coconut energy bites

Ingredients

  • 375 mL (1½ cups) quick-cooking rolled oats
  • 1 ripe banana
  • 60 mL (¼ cup) powdered milk (optional)
  • 60 mL (¼ cup) honey
  • 150 mL (⅔ cup) unsweetened shredded coconut (reserve half this amount in a small bowl for last)
  • 5 mL (1 teaspoon) vanilla

 

Preparation 

  1. In a large bowl, mashed potato the banana with a fork until it is pureed.
  2. Add and mix all ingredients, except for the coconut reserved for last.
  3. Shape the energy bites with your hands by squeezing the mixture and rolling it between your palms. 
  4. Then roll the balls in the reserved coconut to coat them well.
    Place the energy bites in an airtight container in the refrigerator for 4 hours or overnight.
