Pumpkin Energy Bites

We wanted to explore a fall flavor of energy balls! They're the perfect snack when you're feeling hungry or going on a hike!

Ingredients

  • 375 mL (1½ cups) quick cooking rolled oats
  • 125 mL (½ cup) pumpkin puree*
  • 60 mL (¼ cup) pumpkin seeds
  • 60 mL (¼ cup) dried cranberries
  • 60 mL (¼ cup) chia seeds
  • 60 mL (¼ cup) maple syrup
  • 5 mL (1 teaspoon) ground cinnamon
  • 2.5 mL (½ teaspoon) ground ginger

 

Preparation 

  1. In a bowl, mix all ingredients.
  2. Using your hands, shape the bites by pressing the mixture together and then rolling it between your palms. 
  3. Place the energy bites in an airtight container in the refrigerator for 4 hours or overnight.


*You can use the flesh of your Halloween pumpkin and bake it in the oven for a good hour (the length of time will depend on the size of the pumpkin). You can also buy canned pumpkin puree at the grocery store. You'll find it in the baking section next to the canned cherries.
