Apple and cinnamon mini pancakes
Who says cooking a different kind of breakfast has to be complicated? Here's a recipe with just 4 ingredients that you can eat on weekends or on less busy weekday mornings!
Ingredients
- 60 ml (¼ cup) unbleached all-purpose flour
- 5 ml (1 teaspoon) cinnamon
- 125 ml (½ cup) applesauce
- 1 egg
- Oil or butter, for cooking
- Anything you like to eat with pancakes : maple syrup, fruit, nuts, Greek yogurt, peanut butter or nut butter, jam, etc.
Preparation
- In a medium-sized bowl, mix the flour and cinnamon using a fork.
- Add the applesauce and egg and mix until smooth.
- In a non-stick skillet, heat a bit of oil or butter over medium heat.
- Using a ladle, pour small rounds of the mixture into the skillet. Be careful to leave space between them to prevent from sticking together.
- Cook for 2 to 3 minutes on each side.
- Place the pancakes on a plate and serve with whatever you like!
